Success Bread | The Canadian Cabin

Success bread is a variation on the old-fashioned Johnnycake that I’ve known growing up.

Traditionally Johnny cake is a cornmeal flatbread, cooked by frying in a skillet pan. But I only realised this recently, when I started looking into its history.

For me, Johnnycake was a thick cornmeal cake baked into a bundt cake pan, sliced into huge pieces that would leave our stomachs groaning by the end, and served hot with butter.

  • 1 cup plain flour
  • 2 cups All Bran
  • 1 cup corn meal
  • 1 cup brown sugar
  • 2 cups buttermilk
  • 2 tsp bicarb soda
  1. Mix together, pour into a buttered cake pan. (We use a bundt cake pan or angel food cake pan)
  2. Bake for 1 hour at 350F/175C.
  3. Serve warm with pats of butter.
